Cabbage and potato, with a little ginger.
A soft vegetable stew can be dinner’s quieter part. This one leaves the flavours simple and lets a little ginger come through.

Into one pot
Try one small potato, 150 g cabbage, one carrot, a thumb-sized piece of ginger cut into three thin slices, one teaspoon of oil and 400 ml water or lower-sodium vegetable stock.
Wash and cut the vegetables into small pieces. Warm the oil in a saucepan, stir in the ginger, then add the potato, carrot and liquid. Bring to a simmer and cover loosely.
When the root vegetables are nearly tender, add the cabbage. Continue cooking until everything is soft enough for the texture you want. Add liquid if needed. Taste before adding salt, especially if using stock.
Leave room for the rest of the meal
Serve with tofu, cooked beans or another food that suits dinner. A bowl of vegetables need not pretend to be a whole nutrition plan.
The broth is for flavour and spooning, with no cleansing or anti-inflammatory claim attached.
Development draft: not kitchen-tested. Quantities, texture and yield need checking.

Claims not adopted: No inherited nutrient totals, medicinal benefits, source-author experiences or validated substitution claims.
