Sweet potato and chickpeas for a warm breakfast pan.

Breakfast can start with a pan and a few savoury ingredients. It does not need to look like the breakfast aisle.

A first batch

Try one small sweet potato, peeled and cut into small cubes; half a 400 g can of chickpeas, drained and rinsed; half an onion; one teaspoon of oil; and a little smoked paprika.

Simmer the sweet potato in water until just tender, then drain. Slice the onion and soften it in a pan with the oil. Add the sweet potato, chickpeas and paprika. Stir gently and heat thoroughly, following the chickpea can’s directions.

If you want a little browning, let the mixture sit briefly between turns. Do not keep stirring until the sweet potato becomes mash.

Add what the morning needs

Serve warm, with tomato or another food you enjoy alongside. Adjust the amount to appetite; the proposed batch size has not been checked.

Try this on a morning with time to cook. A useful breakfast is also one that fits the day, and a pan is not compulsory every weekday.

Development draft: not kitchen-tested. Quantities, texture and yield need checking.
