A smooth soup does not have to begin with cream. Pumpkin and red lentils can soften together, then be mashed or blended to the texture you want.

A modest pot

Try 300 g peeled pumpkin, 60 g dry red lentils, one small onion, one tablespoon of oil and 650 ml water or lower-sodium vegetable stock.

Cut the pumpkin into small chunks. Soften the chopped onion in the oil, then add pumpkin, rinsed lentils and liquid. Simmer until the pumpkin and lentils are completely soft, adding water if the pot thickens too quickly.

Mash for a textured soup. If blending, follow the blender’s hot-liquid instructions and let the mixture cool as required; a sealed hot blender can be dangerous.

Adjust at the bowl

Taste before seasoning. Bread or another food alongside can make it the meal you want.

The proposed liquid amount needs checking in a kitchen trial. Lentil brands, pumpkin varieties and the texture you prefer will all change how much water the pot needs.

Development draft: not kitchen-tested. Quantities, texture and yield need checking.
